 Pla Kapong Pad King (Stir-fired Sea bass with Ginger)Ingredients :
- 1 Sea bass (700-800 g)
- 100 g of finely sliced ginger
- 1/3 cup of spring onion, sliced into 1 1/2 inches length
- 1 red chili, sliced into thin strips
- 1-2 cloves of garlic, peeled and finely chopped
- 1 tablespoon of soybean paste
- 1 tablespoon of oyster sauce
- 1 teaspoon of sugar
- 1/4 cup of water
- vegetable oil
- coriander leaves for garnishingf
Preparation :
- Scale, gut and clean the sea bass. Fillet and slice into small pieces. Deep-fry until golden and crispy. Lift out and drain off oil.
- Heat vegetable oil in a wok over a moderate heat until it starts vaporizing. Put in the garlic and stir-fry until it is lightly golden.
- Put in finely sliced ginger and soybean paste. Season with oyster sauce and sugar. Put in some water and then stir-fry together.
- Put in the fried sea bass and then stir-fry again.
- Put in the spring onion and red chili. Stir-fry together. Remove from the heat. Arrange on the serving plate and garnish with coriander leaves.
